Grab it via the link in my bio Ocean Trout & Lentil Power Salad 🐟🥗 With over 40 g of protein and 15 g of fibre per serve, this is the kind of salad that actually keeps you full. Ingredients Serves 4 Salad: 1 cup dry green lentils 2 ocean trout fillets 1 Tbsp extra virgin olive oil 3-4 cups baby spinach, roughly chopped 1 cup cooked beetroot, diced ⅓ cup pickled red onion 100g feta, crumbled ¼ cup walnuts, toasted Dressing: ¼ cup extra virgin olive oil Juice of 1 lemon 1 Tbsp Dijon mustard 1½ tsp honey ¼ cup dill, finely chopped Pinch of salt Method: Place the lentils in a saucepan with 3cups water and bring to boil, then reduce to a gentle simmer and cook for ~20 minutes, or until tender. Set aside. Heat 1 Tbsp oil in a pan over medium heat & cook trout 4–5 minutes, then turn and cook for a further 2–3 minutes, or until just cooked through. Set aside to rest, then gently flake into large pieces. Place into a large salad bowl with remaining salad ingredients. Whisk dressing ingredients together & drizzle over salad.
