🤔 If you're using traditional wheat, ok. BUT if you're using western dwarf hybrid (90% of western wheat) then you're not isolating traditional gluten, you're isolating gluten that has 6 molecular changes, and reacts very badly with a lot of people. Some countries, like Italy, use traditional wheat, just check first.
