TERIYAKI SALMON RICE BOWLS Ingredients: recipe makes 2-3 servings For the salmon: 1 lb salmon, skin removed, cut into cubes 1/4 cup coconut aminos 2 tbsp maple syrup 1 tbsp lemon juice 1 tbsp Dijon mustard 2 tsp sriracha (optional) 2 tsp minced garlic 2 tsp sesame oil For the bowls: 2-3 servings of White rice 1.5 cups of frozen edamame 1 Avocado Optional: seaweed snacks Instructions: 1. To a large bowl add coconut aminos, maple syrup, lemon juice, Dijon mustard, sriracha, and garlic, mix together. Then add in cubes salmon. Cover and let marinate for at least an hour. 2. While salmon marinated, prepare your rice according to package instructions, I use. Rice cooker. Prepare your frozen edamame according to package instructions, I just heat mine in the microwave. 3. Heat sesame oil in a nonstick pan over medium heat. Add salmon and all the marinade to the pan and cook for 3 minutes on each side (or longer according to how cooked through you like your salmon, I like mine slightly pink in the middle). 4. Assemble bowls by adding rice, edamame, salmon, and sliced avocado. Drizzle some of the sauce from the pan on top. I like to have mine with seaweed snacks, highly recommend #salmon #salmonbowl #healthydinner
