@amysheppardfood: Halloumi Tikka Kebabs This is hands down the best way to turn a couple of blocks of halloumi into the softest most delicious kebab you've ever had...my lot are still talking about them! It takes about 5 minutes to get this in the oven, so it's the perfect low maintenance summer dinner. Speedy 10 is available to pre-order now and the link is in my bio, Amy x Makes 4 big flatbreads 2 x 250g blocks of Halloumi 1 red onion finely sliced A drizzle of olive oil 4 tbsp tikka masala paste 4 x Greek flatbreads Lettuce Mango chutney Roasted Garlic Mayo Heat the oven to 200C fan Slice the blocks of halloumi widthways with a very sharp knife as thinly as you can - literally wafer thin! Finely slice the onion Place the sliced halloumi and onion in a mixing bowl, drizzle with a little oil, before adding the tikka paste. Give it a really good stir until everything is combined and coated. You can drizzle a small amount of tikka paste on top if you like. Cover the tin in foil and bake in the oven for 10 minutes. Remove the foil and bake in the oven for a further 25 minutes or until the mixture is bubbling and the halloumi is a lovely golden brown colour. Add a smear of mayo, followed by some mango chutney on warmed flatbreads. Top with fresh lettuce. Fish with the halloumi and onion and a little more mayo. You can eat them as they are or you can tuck in the sides and fry them gently on each side for a minute or two, to give them a lovely golden crust.
