@dougdoesdelicious: Cheat sheet for how to win a 19-person one pot dish challenge on Food Network: 80/20 Hainanese Chicken and Rice (One Pot version): Ingredients 2 chicken thighs (450 g) 2 tsp sesame oil (5 g) ¼ tsp salt (1.5 g) Rice 1 ⅔ cup jasmine rice (200 g) 6 clove garlic (15 g) ½ inch ginger (15 g) 2 green onions (30 g) 1 ¼ cup chicken broth (300 g) 1 tsp chicken bouillon powder (5 g) ½ tsp turmeric powder (1 g) Ginger Scallion Sauce ½ inch ginger (15 g) 1 green onion (15 g) 1 tsp sesame oil (5 g) salt (1g) 2 tbsp neutral oil (25 g) Chili Garlic Sauce 6 clove garlic (15 g) ½ inch ginger (15 g) 2 tbsp sambal (25 g) 2 tbsp sriracha (25 g) 1 tbsp chicken broth (15 g) 1 tsp lime juice (5 g) 2 tsp sugar (10 g) 1 cucumber (100 g) cilantro green onion Directions 1. Place chicken thighs in a mixing bowl and season with sesame oil and salt. 2. Add jasmine rice, garlic, ginger, green onion, chicken bone broth, chicken bouillon, and turmeric powder into a pot. (No need to ) 3. Place chicken thighs on top of the rice. 4. Get the pot up to a boil, then drop to a simmer. Cover with a lid and simmer for 20 minutes or until the water completely evaporates. 5. While your chicken and rice are cooking, prepare your sauces. We'll start with the ginger scallion sauce. Sart by adding ginger, green onion and salt into a bowl. 6. Heat the sesame oil and neutral oil in a pan until hot. I usually heat the oil until I start to see the oil start to shimmer or produce the first whisp of smoke. Please watch over the oil while doing this step to avoid accidentally starting a fire. 7. Pour hot oil into the bowl with the rest of the ginger scallion sauce and mix. 8. To make the chili sauce, add garlic, ginger, sambal, sriracha, chicken broth, lime juice, and sugar into a bowl and mix. 9. After 20 minutes, take the chicken out and cut into slices or serve as is. Set the rice in the pot aside and let rest for another 10 minutes. Plate up a scoop of ginger garlic rice with chicken, the sauces, and optional toppings like green onion, cilantro, and / or cucumbers.

As a Singaporean with a grandfather who was a Hainanese chicken rice seller. Oh man yall in the comments are missing out 😩 it’s one of the dishes I can eat EVERYDAY without getting tired of it. When done well, the rice is fragrant and fluffy, usually cooked with chicken stock. The chicken is tender and flavourful. The chilli is the game changer especially if made from scratch! Garlicky, spicy, sweet and sour all at the same time, the best part of chicken rice in my opinion. You can also drizzle some dark soy sauce to add more saltiness but it’s not really necessary. It’s so simple but the flavours are so deep and delicious. Please do not knock it til you try it.

Congratulations! That looks absolutely delicious! We like to brown the chicken thighs skin side down in the bottom of the pot first, then remove and add your rice ingredients, then place the chicken back on top.
