I’m from Mallorca and I’ve never seen a Pistacchio ensaïmada, this is not popular, this is for tourists. Ensaïmadas are lisas, de crema, de cabello de ángel or albaricoque.

Ensaimadas aren't like a donut, they're not supposed to have a filling and they're very airy with layers, they just have powdered sugar on top

PLEASE PLEASE PLEASE GO TO Ca'n Joan de s'Aigo!! they created the first ones! and have a delicious almond or hazelnut shaved ice ice cream!!! it would be a crime to leave mallorca without getting a coffee there (the pastries a small ♥️)
