Add the chicken, coat it well and leave it to marinate for at least an hour. The longer you leave it, the more flavour you’ll get. Heat a little oil in a large pan and cook the chicken until it’s nicely browned. Remove from the pan and set aside. Using the same pan, soften the onions before stirring in the tomato purée, spice mix and a bay leaf. Cook for 30 seconds to bring out all those flavours. Pour in the passata and let it gently simmer for 5-10 minutes until the sauce has thickened and become rich. Stir through the cream, butter, garam masala and a pinch of salt. Add the chicken back in and simmer for another 5 minutes until everything is coated in that gorgeous creamy sauce. Finish with fresh coriander and an extra swirl of cream if you’re feeling fancy
