Cottage Pie
Ingredients
* 1½ lbs beef (your choice)
* 3 carrots
* 3 celery stalks
* 1 medium onion
* 4 cloves garlic
* Fresh herbs (optional, tied together)
* 2 tbsp tomato paste
* 2 tbsp flour
* 2 cups beef broth
* ¼ cup red wine
* 2 tbsp high smoke point oil
* Salt & pepper
* Seasonings of your choice
Beef Filling
1. Pat the beef dry, season with salt and pepper, cube it, and sear in oil for about 2 minutes per side. Remove from the pot.
2. Reduce heat to medium. Add the carrots, celery, and onion. Sweat for 3–4 minutes.
3. Add the garlic and cook until fragrant.
4. Stir in the tomato paste, then the flour. Cook for 2 minutes.
5. Add your favorite seasonings.
6. Pour in the red wine and deglaze the pot, letting the wine reduce by about half.
7. Add the beef broth and fresh herbs.
8. Return the beef to the pot, cover, reduce heat to medium-low, and simmer for 30–40 mins until beef tender. SAUCE/GRAVY. 1Remove the beef and set aside.
2. Remove the herbs.
3. Strain the vegetables over the pot, pressing them through for a smooth, flavorful gravy.
4. Over low heat, stir in 2 tbsp cold butter until melted.
5. Add small diced carrots if desired.
6. Shred or break up the beef and place it in a baking dish.
7. Taste the gravy and adjust the seasoning.
Mashed Potatoes
* 3 large russet potatoes, peeled and cubed
* Salt
* Warm milk or heavy cream
* 2 tbsp butter
* Salt & pepper
1. Boil the potatoes in salted water for 6–8 minutes, or until fork tender.
2. Warm the milk (or cream) with the butter over low heat until the butter melts.
3. Drain the potatoes and mash with the warm milk mixture.
4. Season with salt and pepper until smooth and creamy.
Assemble
* Preheat oven to 375°F (190°C).
* Spread the beef mixture into a baking dish.
* Top with the mashed potatoes.
* Score the top with a fork for extra crispiness.
* Bake for 8–12 minutes, or until the potatoes are golden.
* Cut into portions, spoon the gravy over the top, and finish with fresh or dried parsley.
