Thousands of dollars on equipment just to batch espresso? It’s not an opinion, it’s scientifically different even 1-2 hours later.

it does lose some volitiles and some compounds break down resulting in a change of flavor in a bad way, but for like, 70% of people they wouldn't notice, but the Baristas would, and so would the people who regularly order coffeee

I'm guessing it's only noticeable if you're drinking it straight or espresso forward drinks like a cortado but for lattes with milk and syrups this is a great idea

Why are trainee baristas told if they leave a shot for more than a minute without mixing it with something ‘it’s ruined’ ?

Tastes flat tho. It reminds me more of a concentrated cold brew.

Those volatile oils disagree with you. Rancid after 2 days, no way it isn’t.

I did a few blind tastings comparing pre-batch vs. fresh espresso vs. cold brew concentrate, and pre-batch surprisingly won by a large margin for both dairy and oat based drinks. The only issue for me is the optics and temperature if serving flat white or smaller volume drinks.

Andy :
You 💯 notice the difference when you are getting a shot of espresso fresh vs batched. When used in drinks there is no difference as people put crazy amounts of syrup in it and or milk and cream.

I like brewed coffee after it sits and cools - it's less bitter and a fuller flavor
