This recipe is completely inspired by @Here’s Your Bite recipe & this was soooo freaking delicious. It felt so cozy and made me feel warm inside. Definitely recommend y’all to make this   Sausage Tortellini Soup 3 celery, minced  1/2 yellow onion, finely diced  2-3 carrots, finely diced  1 tbsp butter 1 tbsp olive oil  5-6 garlic cloves, minced 1 lb Italian sausage, hot or mild 2 -3 tbsp tomato paste  2 cans of 15 oz crushed tomatoes 2-3 tbsp flour 1/2 c dry white wine  1 bottle of chicken broth  Parmesan rind 1/2 c heavy cream 18-20 oz of cheese tortellini  2 c spinach  1/4 c Parmesan  Parsley & basil Bay leaf  Salt Pepper Italian seasoning  Red pepper flakes Directions:  1. In a large pot, on medium heat heat, add in your olive oil & butter. Once melted, add in your veggies (onion, celery, carrots, & garlic), cook for 5-7 mins. Season with salt, pepper, & Italian seasoning to taste   2. Add in your Italian sausage, season with salt, pepper, Italian seasoning, paprika & red pepper flakes. Cook until no longer pink.  3. Create space in the middle & add in your tomato paste. Cook for 2-3 minutes before adding in the flour. Cook for another 2-3 minutes before deglazing with white wine. Cook for another 2 mins 4. Add in your chicken broth & crush tomatoes. Add your Parmesan rind & bay leaf. Let it come to a boil & cook uncovered for  20 minutes.   5. Add tortellini & spinach. Cook until tender about 2-3 mins.
