Save this one 👇 Makes 3–4 serves Ingredients Salad • 250g short pasta (penne, rigatoni or farfalle) • 1–2 tbsp extra-virgin olive oil • Salt & pepper • 1 iceberg or cos lettuce, chopped • 1 punnet cherry tomatoes, halved • ½ small red onion, finely diced • 1 Lebanese cucumber, diced • Handful fresh parsley, finely chopped Dressing • 200g Greek yoghurt • 1 tsp Dijon mustard • 1.5 tbsp lemon juice • 1 tbsp extra-virgin olive oil • ½ tsp garlic powder • Salt and pepper, to taste Optional • Parmesan cheese • Protein of your choosing Method 1. Whisk dressing ingredients until smooth. 5. Toss salad with dressing. 6. Top with crunchy pasta just before serving. Tip: If prepping ahead, keep the dressing and pasta separate so it stays fresh.
