🍋 ULTRA SOFT LEMON CINNAMON ROLLS 🍋 Ultra-soft rolls with a lemony filling and a creamy lemon curd glaze ! Ingredients : For the dough : - 400g flour - 7g dried yeast - 65g sugar - 1 pinch of salt - 180g lukewarm whole milk - 1 egg + 1 egg yolk - 60g melted butter Filling : - 80g softened butter - 100g brown sugar - 1 tablespoon lemon zest - 1 teaspoon vanilla extract Lemon curd : - 2 eggs  - 100g sugar  - Juice of 2 lemons (≈ 80-100g)  - 50g butter  - 1 tablespoon cornstarch Frosting : - 1 tablespoon Philadelphia cream cheese - 2 tablespoons mascarpone cheese - 2/3 tablespoons powdered sugar - 2 teaspoons milk - 2 teaspoons of lemon curd Recipe : For the dough : Mix the lukewarm milk and yeast, then let it rest for 10 minutes. Add the sugar, eggs, and melted butter, mix well, and then add the flour. Mix with a spatula until you obtain a smooth dough. Form the dough into a ball, cover with plastic wrap, and let it rise for 1 to 1.5 hours, until it has doubled in volume. For the lemon curd : In a saucepan, add the eggs and sugar, mix, and then add the lemon juice and cornstarch. Cook over medium heat, stirring until thickened. Remove from the heat and immediately add the butter. Mix well and set aside to cool.  For the filling : Mix the softened butter, brown sugar, lemon zest, and vanilla to obtain a creamy consistency.  For the frosting : Mix the Philadelphia cream cheese, mascarpone, milk, and powdered sugar. Add the lemon curd and mix well until you obtain a smooth, creamy texture. Once the dough has doubled in volume, deflate it and roll it out into a rectangle. Spread the filling evenly over the surface, then add a little lemon curd on top. Roll the dough up tightly and cut into 8 to 10 rolls. Place them on a baking sheet and let them rise for about 30 minutes. Then, pour a little warm milk or cream over the rolls for extra softness and bake at 180°C (350°F) for 20 to 25 minutes.
