@brendanpang: COCONUT & GREEN CURRY BAKED FISH 🥥🐟 One of those recipes that feels fancy but couldn't be easier! - 800g barramundi fillet - 1–2 tbsp olive oil - Salt and black pepper Coconut Green Curry Sauce - 400ml coconut milk - 4 garlic cloves - Juice of 1 lime - 2 tbsp green curry paste - 1 large handful coriander - 1 large handful spring onions - ½ white onion, roughly chopped - 1 jalapeno - Salt and black pepper Preheat your oven to 200C. Add the coconut milk, garlic, lime juice, green curry paste, coriander, spring onions, onion and jalapeno to a blender. Season with salt and pepper, then blend until completely smooth. Place the fish in a baking dish, drizzle with olive oil and season generously with salt and pepper. Pour the sauce over the fish, ensuring it's well coated, then roast for 20 minutes, depending on the thickness of the fish, until just cooked through and flaky.
