Here’s to celebrating AAPI Heritage Month 🥳 and for all my lovers and friends (Even the haters)! #appiheritagemonth My goal is to always showcase recipes that are authentically me. That doesn’t mean every recipe I share is authentic in how it’s traditionally made but I’ll continue sharing the flavors that are authentic to what I grew up eating whether it be from my indoor or outdoor kitchens.  My food influence comes from a mesh of many different cultures specifically Chinese, Cambodian, Vietnamese and American just to name a few. Food brings people together. It shouldn’t tear us apart by comparing the differences.  We should understand that every recipe has originated from somewhere and just because we make it differently, it shouldn’t mean that we can’t share our rendition.  I’m so proud to be Asian American and to be able to have a platform where I can share my culture, experiences and stories and relate with my community 💜 Recipe: Rotisserie Chicken Pho 1/2 rotisserie chicken, shredded with bones  10 cups water  3 cups chicken stock 1/3 cup fish sauce, or more to taste  1 medium onion, peeled  5-6 garlic cloves  3 inch piece ginger, 1/4 inch slices  3 inch nub rock sugar or 2 tbsp sugar  2 tbsp chicken bouillon  Spices:  3 star anise pieces  10-12 whole cloves  1/2 tbsp fennel seeds  Rice noodles / Pho noodles Garnishes: Bean sprouts Jalapeños, thinly sliced  Green onions, thinly sliced  Cilantro, rough chop  Hoisin sauce Sriracha  Fried garlic or shallots  1. In a small pan, toast, star anise, cloves and fennel seeds for 3 to 4 minutes or until fragrant. Once cooled, pour into a small spice bag and set aside. 2. In a large pot, boil water and chicken stock. Then add in shredded rotisserie chicken and bones, onion, garlic, ginger, chicken bouillon, rock sugar, and spice bag. Bring to a boil then simmer for at least 30 minutes. 3. Prepare the garnishes by slicing jalapeños, roughly chopped cilantro, thinly sliced green onions.  4. Blanch rice noodles in boiling water for 15 to 30 seconds. Then ladle broth into a bowl with rice noodles top with all the garnishes your heart desires.
