The crispy beef with the fresh smashed cucumber and tangy pickled onions is the perfect combo 🤌🏼 Save this one for your next meal prep and let me know if you try it! ❤️ •470 kcals per portion •34g PRO, 61g CHO, 11g FAT Serves 4: -500g of lean beef mince (less than 5% fat) -2 cloves of garlic, minced -1 thumb size piece of ginger, grated -1 red pepper, chopped -2 tsp of cornflour mixed with warm water to make a slurry -240g of uncooked wholegrain rice -Spring onion, for garnish -Sesame seeds, for garnish Sauce: -60g of sriracha -3 tbsp of light soy sauce -2 tbsp of honey -1 tbsp of dark soy sauce -2 tbsp of white wine vinegar -1 tsp of sesame oil Smashed cucumber: -6 mini cucumbers -Pinch of salt -2 tbsp of light soy sauce -30g of chilli oil -1 tbsp of white wine vinegar -1 tsp of sugar Pickled red onions (this will make extra) -2 red onion, thinly sliced -1 cup of water -1 cup of white wine vinegar -2 tbsp of sugar -2 tsp of salt Method: 1. Cook and boil rice according to packet instructions. 2. For the smashed cucumber, use your fist to smash them down and then chop into smaller chunks. Transfer to a bowl and season with salt. Let this sit while you prepare the rest of the meal. 3. For the pickled onion (I had this pre made), bring a pot of water, white wine vinegar, sugar and salt to a low simmer and stir until everything is dissolved. Thinly slice the red onion, place in a bowl and pour over the liquid. Let this sit for at least 30 minutes. Store the rest in an air tight container in the fridge. 4. Heat a pan on medium heat. Add the mince, break down and cook until browned. Add garlic and fry for 2-3 minutes. Then, add in the red pepper and fry again for another 5 minutes. 5. Mix the sauce ingredients together. 6. Pour the sauce into the pan along with 100ml of water and the cornflour slurry. Let this simmer for 10 minutes or until the sauce has thickened. 7. For the smashed cucumber, drain the excess liquid from the bowl. Then, add the soy sauce, chilli oil, white wine vinegar and sugar. Mix well. 8. Divide the rice and mince into four portions.
