I had this idea that humans are special because they're not tethered to anything, elves are tethered to magic, dwarves to stone, etc, humans aren't so they get to do whatever they want.

Humans are actually terrifying in most fantasy contexts. Since all other species are born from Gods or powerful magical beings but humans are forged from survival and natural evolution. There’s only a few mainstream fantasy universes that specify Humans are also created by Gods, for example Tolkien.
