It was so much fun testing out the menu for the supper club that’s happening this week! I filmed this a month ago when we did a test run, and figured since the supper club is 6 days away !!!! Now would be the perfect time to go through the menu and show you what I’ve designed. I’m doing the club in collaboration with @thefooddirectoryuk as one of their guest chefs, and they asked if I could design a menu that leans into my Pakistani heritage while utilizing the skills and techniques I’ve learned from culinary school & working in professional kitchens. So, the dinner will start with a canapé, then go through a starter, main/sides, and dessert! I’m super excited to cook for everyone who bought a ticket this Saturday and I hope you like the video! Canapé: Papri crisp w/ smoked aubergine, pickled rhubarb, & parsnip Starter: Cured snapper w/ tomato & ginger consomme, green chutney oil, pickled rhubarb Main: Nihari stuffed pappardelle, pickled ginger, micro coriander, green chutney oil Grilled paneer, spiced cauliflower, yogurt, green chutney oil Sides: Spiced miso braised cabbage Veg pakoras w/ wild garlic aioli Dessert: Miso chai ice cream Saffron & cardamom cake #lailaspantry #chef #supperclub #londonsupperclub #menuplanning
