Cheesy French Onion Steak Bites over Mash 😍  I’ve got another cosy bowl for you that’s perfect for cold nights. Jammy French onion gravy with melted cheese, poured over steak and served on creamy mash 🤤 proper banging comfort food 🤌🏼  Save for later 📌 Ingredients (serves 2):  500g potatoes (I use Maris Piper), peeled and chopped

15g lighter butter spread
80ml semi-skimmed milk 1 very large white onion thinly sliced 
½ tsp sugar  1 ½  tsp balsamic vinegar  1 beef stock cube  250ml hot water 1 tsp cornflour mixed with 1 tbsp cold water 
1 rump steak (250g)  30g reduced fat cheddar, grated 30g mozzarella grated 
 💕Add the potatoes to a large pan of cold, well-salted water. Bring to the boil, and cook 15-18 minutes until tender. Drain well and return to the pan. Add the butter, milk and plenty of black pepper, then mash until smooth and fluffy. Cover and keep warm. 💕 Heat a large non-stick frying pan over a medium-low heat and spray lightly with oil. Add the sliced onion with a pinch of salt and cook gently for 15-18 minutes, stirring regularly, until very soft and golden. 💕Stir in the sugar and balsamic vinegar and cook for 1 minute until glossy. Crumble in the stock cube, pour over the hot water and bring to a gentle simmer. Stir in the cornflour slurry and cook for 4-5 minutes until thickened into a rich onion gravy. 💕Pat the steak dry and season well with salt and black pepper. In a separate pan, over high heat cook for 2-3 minutes per side for medium-rare (depending on thickness). Remove from the pan and rest for 5 minutes, then dice. 💕Remove the onion gravy from the heat. Scatter over the grated cheddar and mozzarella and stir gently until melted and glossy. The residual heat will melt the cheese without making the sauce too thick. If it thickens too much add a splash of water.  💕 To serve, spoon the mash into bowls, top with the steak and generously ladle over the hot cheesy onion gravy.
