Full Recipe ⬇️ ⬇️ 665 calories 70g protein 30g fat 41g carbs (7 net carbs) 34g fiber 6 servings (5 tacos each) Ingredients (Marinade): • 3 lb rump roast • 1 can chipotles in adobo • 1 (15 oz) can crushed tomatoes • 4 garlic cloves • 1 small onion • 1 tbsp salt • 1 tsp black pepper • 1 tsp chili powder • ½ tsp cumin • ¼ tsp cinnamon • 1 cup beef broth • 2 bay leaves (whole) For each serving (5 tacos): • 5 Mission Carb Balance street taco tortillas (0 net carbs) • 2.5 oz low-fat mozzarella (½ oz per tortilla) • ~5-6 oz shredded cooked barbacoa • Chopped white onion + fresh cilantro • Cooking liquid for brushing Consommé (per serving): • 1 heaping tbsp cooking liquid • 2 tbsp piping hot beef broth Instructions: 1. Blend all marinade ingredients (except bay leaves) until smooth. 2. Place rump roast in crockpot, pour marinade over top, add bay leaves. Cook on low for 8 hours. 3. Remove beef, shred in a bowl, discard bay leaves. Save the flavorful cooking liquid. Taco Assembly (per serving): • Lightly brush 5 tortillas with cooking liquid. • Top each with ½ oz low-fat mozzarella. Broil until cheese melts. • Divide ~5-6 oz shredded barbacoa across the tortillas. • Add chopped onion + cilantro. Fold tacos. • Broil 1-2 minutes per side until crispy and golden.
