I think it's either for aesthetics or drawing references. Some people will make aesthetic boards of characters, some could be children. There's tons of adult eyes, hands, mouths, even torsos on Pinterest due to aesthetics and boards. I'd say the main reason for the kids mouths, really, is because the gaps between their teeth (if they have one) is usually more prominent and makes for better overdramatized proportions.
