@ahnestkitchen: This is our One Pot Beef & Carrot Cold Noodle Dish. Great for those who want a non-spicy cold noodle dish. Relatively a new dish we have been enjoying in our rotation this summer. Very easy to make on a lazy weekday night. SERVES: 2 INGREDIENTS: Carrot seasoning: 6oz carrots (shredded) 2 Tbsp veg oil (we use avocado oil) 1/4 tsp salt 2 tsp sugar Meat seasoning: 6 oz ground beef 2 tsp soy sauce (we use regular @KikkomanUSA) 2 1/2 tsp sugar Noodle seasoning: 6oz somyeon (we use @sempio.official) 1 1/2 tsp tsuyu 1 Tbsp soy sauce 1 Tbsp plum extract syrup 2 tsp vinegar 1 Tbsp sesame oil, plus more for topping (we use @sookifoods) 1/4 tsp black pepper 1 Tbsp sugar 1/2 tsp DASIDA (beef stock powder; optional!) Shredded seaweed, seasoned for topping INSTRUCTIONS: 1. Heat oil in a wok over medium-high heat. Add carrots and cook until they begin to soften. Add salt and sugar. Cook until tender but still has bite. Set aside. 2. In the same wok, cook the beef, breaking it into small pieces. Blot any excess liquid with a paper towel. When mostly browned with a little pink remaining, add soy sauce and sugar. Cook until just done but still moist. Set aside. 3. Without washing the wok, fill it with water and bring to a boil. Cook somyeon according to the package directions (about 3 minutes). Drain, then rinse under cold running water, rubbing the noodles until cooled. Drain well. 4. Rinse wok. Add noodles, carrots, beef, and remaining ingredients. Toss until evenly coated.
