Another week of meal prep that tastes good reheated 🙂‍↔️ sloppy joe bowls!!  FULL RECIPE: For the sloppy Joe mixture: -2 lbs ground beef (can also do turkey or chicken!); I use 96/4 -1 medium yellow onion, chopped -1 green bell pepper, chopped -1 red bell pepper, chopped -3 garlic cloves, minced -1 cup Ketchup  -1/2 cup BBQ sauce (I like the G Hughes sugar free) -1 tbsp Worcestershire sauce -1 tbsp red wine vinegar -1 tbsp yellow mustard  -salt & pepper to taste For the potatoes: -1 bag small gold potatoes -1-2 tbsp olive oil -sprinkle of salt, pepper, onion powder, garlic powder, and paprika Optional toppings: -cheese of choice -pickled red onions -pickles Chop potatoes into small wedges/slices & toss in a large bowl with olive oil and seasonings until well coated. Transfer to air fryer and cook at 400 degrees for 10-12 minutes (can go longer if you like them crispier!) Place 1 tbsp of olive oil in a large pan and add bell peppers, onion, and garlic. Cook over medium heat for ~3-5 minutes or until slightly softened. Add ground beef and season with salt & pepper. Once beef is fully cooked, add ketchup, bbq, Worcestershire, vinegar, and mustard. Stir until well combined and allow mixture to simmer for 5-10 minutes or until thickened.  Once sloppy Joe mixture & potatoes are ready, transfer into meal prep containers.
