Have you ever craved something you’ve never even had before? 😂 I randomly thought, what if I turned potatoes into boba? And let me tell you… they’re SO chewy and delicious! Potato Boba Ingredients 3–4 russet potatoes 1 cup potato starch Salt, to taste For the chili oil topping 1 tsp gochugaru 1 tbsp chopped parsley or green onions 1 tbsp minced garlic 1 tbsp soy sauce 2–3 tbsp hot oil 1. Steam or boil the potatoes until fork tender (I steamed mine). 2. Mash them while they’re still hot. Add the potato starch and salt, then knead into a smooth dough. If it’s too dry, add a little water. 3. Roll the dough into small boba-sized balls. 4. Boil until they float to the surface, then transfer them to cold water. Drain well. 5. Place the potato boba in a bowl. Add the gochugaru, parsley or green onions, garlic, and soy sauce. 6. Pour the hot oil over everything and mix until well coated.
