STRAWBERRY PECAN CUCUMBER SALAD 🍓🥒 I love cucumber salads during the summer and have shared quite a few summer salad options with you. I feel this one brings everything together really nice - a little sweet, a little salty, creamy and crunchy. Its super fresh, holds up great, and will make you feel good. You can of course top it with some shrimp, chicken, white fish, or any protein of your choice. Here is how I made it: 1.First, start by finely dicing or thinly slicing 4-5 Persian cucumbers. Add into a bowl or a jar, your call. 2.To the cucumbers, add about half a quart of fresh organic strawberries. You can scut these, or make them smaller, but I like bigger chunks of berries. 3.Add 1 avocado cut into cubes, 1/3 to 1/4 cup of toasted pecans (make sure these are toasted and cooled, getting them toasted brings out the flavors), 1/4 cup to 1/3 cup of fresh Thai or lemon basil or mint. Make sure its finely chopped. 4.To dress this up, I squeezed half to 1 large lemon, added about 1/4cup to 1/3 cup of a GOOD olive oil, a couple pinches sea salt, about a tablespoon of chile lime seasoning (I get mine at Trader Joe’s), a small pinch of salt, 1 tbsp black sesame seeds (optional), and about 3-4oz fresh feta, crumbled on top. 5.If in a jar, give it a really good shake, or in a bowl, give it a great toss to make sure everything is well incorporated. Give your salad a really good toss to make sure everything is mixed in well. Taste, then adjust as you’d like. You may want to make it less/more lemony, more salty, or whatever. I usually wait to add salt at the end because the feta does have quite a bit of salt to it. This is one salad where you can adjust the ratio of your ingredients to whatever your preference. Try to use organic or local strawberries if you can, they are not only better for you, but they taste better and sweeter and bring this all together.
