@anakitchendiary: Potato crust quiche 🥔🍳🥓🍄🟫 ✨ ingredients (18cm tin): 🥔 crust: • 350g boiled potatoes • 1 egg yolk • 30g grated cheddar • salt & black pepper to taste 🥓 fillings: • 100g mushrooms • 100g ham (diced) • 150g cheddar (grated, split 80g/40g/30g) • 3 spring onions • 1 tsp Dijon mustard • 1 tsp oil or butter • 6 eggs • 100g cottage cheese • 50ml milk • salt & pepper to taste 🧑🍳 method: • make the crust: mash hot potatoes with yolk, 30g cheese, salt, and pepper. grease the tin with oil. • mold & bake: press mash firmly across the bottom and up the sides (1cm thick) -> bake at 175°C for 20 minutes to set -> once set, brush crust base with 1 tsp mustard • prep fillings: fry mushrooms until golden and completely dry -> mix mushrooms, ham, onions, 80g cheddar, eggs, cottage cheese, milk, salt and pepper -> transfer the mix on to the potato base -> top with remaining 40g cheddar. • bake & shield: bake at 170°C for 50 minutes until center is fully set -> cool in the tin before slicing • enjoy 🧡 #quicherecipe #dinneridea #easyrecipeideas #hamandcheese #potatorecipes

Made it last night and it was delicious. Yes, you part bake the potato base for those who can't be bothered to read the instructions. Effectively, it's a potato based quiche so you could do bacon, peppers whatever takes your fancy. Lovely hot with a nice salad and we're having leftovers cold tonight. Thanks for the recipe 👍
