Beef Fat Mixture 1 Pint Melted Beef Fat (or butter) 70g Cornstarch or Potato Starch 2 Sprigs Thyme 2 Sprigs Rosemary 3 Cloves Garlic Directions: Melt the beef fat and add the garlic, rosemary and thyme. Let steep for 30 minutes. Strain and whisk in the cornstarch. Pour over the vegetables and fold well. Building: Spray a 400 hotel pan with oil and line with parchment paper. Begin with layering the red beets, by yellow beets, by sweet potato by rutabaga. Place another piece of parchment over that and place another hotel pan above. Place something heavy on top of it, like cans of tomatoes etc (I have bricks) and place it in the fridge overnight. This step is not necessary but I find that it helps keep it tighter. Otherwise, once you have the bricks on top of it you can bake directly at 325 C for 3-4 hours. Check at 4 hours by sliding a cake tester or fork in it. Once tender, place in the fridge overnight with a heavy weight on top of it to set. The next day use a torch to help the fat melt and release from the pan.
