Self confessed FEEDER!! Food is my love language 🧁🤷🏼‍♀️  Jam Duffins 🤍: These are honestly one of those bakes that feel way fancier than the effort they take. Think fluffy muffin meets a soft, buttery doughnut... with a jammy middle!! You'll need: * 140g sugar * 200g plain flour * 1 tsp bicarbonate of soda * Pinch of salt * 100ml natural or Greek yoghurt * 2 eggs, beaten * 1 tsp vanilla extract * 140g unsalted butter, melted and cooled * 12 tsp jam (plus 6 tsp peanut butter if you fancy it) For the coating: * 80g sugar *sprinkle of cinnamon if you like Method: 1. Preheat your oven to **180°C (160°C fan) and grease a 12-hole muffin tin with a little butter. 2. In one bowl, mix together the sugar, flour, bicarbonate of soda and a pinch of salt. In another, whisk together the yoghurt, eggs, vanilla and cooled melted butter. 3. Pour the wet ingredients into the dry and gently fold everything together until you have a smooth batter. Try not to overmix. 4. Spoon a little batter into each muffin hole, just enough to cover the bottom. Add a teaspoon of jam to the middle (give it a quick stir first if it's quite thick), then half a teaspoon of peanut butter if you're using it. Cover with another spoonful of batter. 5. Bake for 15–20 minutes, until the duffins are golden, spring back when lightly pressed and a skewer comes out clean. 6. Place the extra sugar into a shallow bowl.
