This bowl comes together in under 30 minutes; it's bursting with flavour (protein and fibre too 😏) and is perfect for a busy weeknight. Serves 2: 2x haddock fillets (or any other white fish) 1 tbsp @Ottolenghi Pomegranate & Rose Harissa Asparagus spears Red cabbage, thinly sliced Edamame, to garnish 3/4 cup uncooked quinoa 1/2 avocado Handful of coriander Garlic clove 1/2 freshly squeezed lime juice EVOO Pinch of sea salt Spread the rose harissa over haddock and roast it alongside seasoned asparagus. While that's cooking, boil a cup of quinoa in a saucepan. Blend together avocado, coriander, garlic, lime juice, sea salt and EVOO to get that creamy dip.
