@sajiyavora: Masaledar Chicken Biryani #fyp #FoodTok #EasyRecipes #biryani #desi Ingredients * 1 kg chicken * 4 cups basmati rice, soaked for 30 minutes * 4 onions, thinly sliced * 4 tomatoes, blended * 2 tbsp ginger-garlic paste * 1 tsp red chilli powder * 1½ tsp coriander powder * ½ tsp turmeric powder * 3 tbsp biryani masala * 1 tsp garam masala * ½ cup plain yoghurt * ½ bunch fresh mint leaves * 1 bunch fresh coriander leaves, chopped * 4–6 green chillies, slit * ½ cup cooking oil * 3 tbsp ghee (clarified butter) * Food colour (optional) * Salt to taste Whole Spices for Rice * 1 tsp cumin seeds * 4 green cardamoms * ½ tsp whole black peppercorns * ½ tsp cloves * 4–8 bay leaves * 1 tbsp lemon juice Method 1. Heat the oil in a large pot and fry the onions until golden brown. 2. Add the ginger-garlic paste and cook for 1 minute. 3. Add the chicken and fry for 5–7 minutes until lightly browned. 4. Add the chilli powder, coriander powder, turmeric, biryani masala, garam masala, and salt. Mix well. 5. Add the blended tomatoes and cook for 5–7 minutes. 6. Stir in the yoghurt and cook until the masala thickens and the chicken is fully cooked. 7. Add the chopped coriander, mint leaves, and green chillies. Cook the Rice 1. Boil plenty of water with salt, cumin seeds, cardamoms, cloves, black peppercorns, bay leaves, and lemon juice. 2. Add the soaked rice and cook until 90% done. 3. Drain the rice. Layer & Dum 1. Spread half the rice over the chicken. 2. Top with the remaining rice. 3. Drizzle with ghee and food colour (if using). 4. Cover tightly with foil and a lid. 5. Cook on very low heat for 20 minutes. 6. Rest for 10 minutes, then gently fluff and serve.
