What makes the theorizing fun is that it could be true. If it’s left unfinished, I’d be more annoyed that relieved. That said, even if he finished the entire series together, he should stagger the publications

I honestly don't care if he finishes. I love his world building. If he just starts doing books about side characters and different places within the ASOIAF universe I would accept that more because he does want to flesh out his world more. I want that novella of Rhaenyra, Harwin and Laenor and how they navigated that dynamic interpersonally. If things like that is what he wants to explore he should do it. I'm just happy to have the reading material.
