I make these at least once a week 🌽 Recipe below 💛 Street Corn Beef Bowls Ingredients: * 2 large sweet potatoes, diced * Olive oil * Salt and pepper * Garlic powder * Paprika * 1 lb ground beef * Taco seasoning * 1 (15oz) can of sweet corn, drained * 1 jalapeno, diced & seeds removed * 2 tbsp chopped cilantro * 2 tbsp sour cream or Greek yogurt * 2 tbsp mayo * Juice of 1/2 lime * 2 tbsp grated parmesan or Cotija cheese * Chile lime seasoning * Avocado for serving Instructions: 1. Preheat oven to 425F 2. Line a sheet pan with parchment paper & add the diced potatoes. Toss with 1 tbsp olive oil, salt, pepper, garlic powder, paprika (measure with your heart) Roast in the oven for 30-35 minutes until fork tender. 3. Brown your ground beef & season with taco seasoning. 4. Create the street corn mixture by combining the corn, jalapeno, cilantro, sour cream, mayo, lime juice, cheese, & chile lime seasoning to taste in a small bowl. 5. Assemble your bowls by layering the sweet potatoes, ground beef, and street corn mixture. Top with sliced avocado & more chile lime seasoning.
