Assemble the sushi: 	•	Place a nori sheet on a bamboo mat. 	•	Spread an even layer of rice (wet your fingers to avoid sticking), leaving 2cm at the top. 	•	Add chicken, cucumber, lettuce, and mayo if using. 4.
