I tried the caramel 3 times with golden caster sugar and burnt it every time, before it had even dissolved, is this a thing? As soon as I tried normal caster sugar it came out perfect! Same temp/technique each time

The first time I did it I did it your way and it burnt, the 2nd time I did it with my own caramel recipe and it worked, my recipe isn't much different. I use plain caster sugar, I add the butter at the end after the cream, you take it off the stove and then add butter and it works perfectly. Also as soon as it looks like the sugar is browning/medium golden brown you need to add the cream as it gets too bitter if you go to a dark brown IMHO. I got it to whip and everyone really enjoyed it 😊
