Recipe:
Chicken breast or thigh
Yellow onion
Cherry tomatoes
Sundried tomatoes
Spinach
Orzo
Chicken stock
Cream cheese or boursin
Parmasan cheese
Olive oil
Spice mix:
Paprika
Onion powder
Garlic powder
Salt
Pepper
Oregano
Method:
Start by slicing your chicken into bite sized chunks. Season with the spice mix and coat everything with a drizzle of oil to distribute the spices better. Fry the chicken on medium heat until golden. Add onion, Sundried tomatoes, garlic and cherry tomatoes. Let it cook for about a minute while stirring. Add one cup of orzo pasta. Add 1 and 1/5 cup of chicken stock. Reduce heat to low, cover and Simmer until pasta is tender.. Add boursin or cream cheese and stir well. Add spinach and stir until wilted. Sprinkle some Parmesan at the end and enjoy 😊
