Sweet Potato Hash 2 medium sweet potatoes, diced 1 tbsp olive oil 1 tsp smoked paprika 1 tsp garlic powder 1/2 tsp onion powder 1/2 tsp cumin Salt & pepper Citrus Garlic Chicken 2 boneless, skinless chicken breasts 2 tbsp olive oil Juice of 1 lime 1/4 cup orange juice 4 garlic cloves, minced 1 tsp cumin 1 tsp smoked paprika 1 tsp dried oregano 1/2 tsp chili powder 1 tsp salt 1/4 tsp black pepper 1/2 cup chicken broth Corn 2 cups corn 1/2 tbsp olive oil 1/2 tsp smoked paprika 1/2 tsp chili powder 1/4 tsp cumin 1/4 tsp garlic powder Juice of 1/2 lime Salt and pepper For Topping Feta or cotija cheese Green onions, chopped Cilantro lime dressing Honey 1. Place the chicken breasts in a crock pot. Whisk together the olive oil, lime juice, orange juice, garlic, cumin, smoked paprika, oregano, chili powder, salt, pepper, and chicken broth. Pour over the chicken and cook on LOW for 3-4 hours, then shred and toss in the juices. 2. Toss the diced sweet potatoes with the olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Air fry at 375°F for 15-20 minutes, shaking the basket every 5 minutes, until crispy and tender. 3. Mix the ingredients for the corn mixture. 4. Assemble your bowl with the crispy sweet potatoes, shredded chicken, and street corn. 5. Top with feta or cotija cheese, diced green onions, a generous drizzle of cilantro lime dressing, and a light drizzle of honey.
