When you bring a glass baking dish out of the oven and you stick it on a cold countertop that can make it bust. You should still put a towel even on your stove top. If it’s cold it shocks it and it could bust. It’s happened before to me, scared the life out of me and ruin dinner.

Pre pipe the ricotta mixture with a large tip and freeze them and store them in a ziplock. Pop them into the manicotti as needed!
