Add the onions and fry until golden brown. Add the bay leaves, black peppercorns, cloves, green cardamoms, black cardamoms, and cinnamon sticks. Sauté for 30 seconds. Add the ginger garlic paste and cook until fragrant. Add the mutton, turmeric, cumin powder, coriander powder, black pepper, and salt. Sauté on high heat. Pour in 7 cups water, close the lid, and pressure cook for 40–45 minutes after the first whistle. Strain the yakhni, separating the meat from the stock. Reserve ½ cup yakhni. Mix the melted butter, warm milk, saffron, and food color. Brush the mixture over the meat and broil in a preheated oven at 220°C for 10–15 minutes, or until lightly golden. Bring the remaining yakhni to a boil. Add the soaked basmati rice and adjust the salt. Cook until most of the liquid driesup. Cover and cook on dum—first on high heat until steam forms, then on low heat for 10 minutes. Remove the meat from the oven, brush it with the reserved yakhni, and arrange it over the mandi rice.give coal smoke &Serve hot with Daqoos, green chillies, lemon wedges, and sliced onions.
