Romanian chicken soup for the win! Recipe below ⬇️ I went to a Romanian church for 5 years when I was a teenager and after church when I went to my friends' houses we had this soup and it was sooo good! We do mix it up a bit. The soup I ate as a kid had vermicelli noodles but we added homemade noodles from @farmhouseonboone instead. Also the lemon was traditionally put in the soup before serving (with extra lemon wedges at the table) but my kids prefer to squeeze the lemon in themselves. The French baguette recipe is from allrecipes.com. Here is the soup recipe: Romanian chicken soup 1 T. Oil 1 onion chopped 1 celery rib, chopped 1 carrot chopped 1/8 c red pepper chopped 1 chicken skin removed cut in pieces 12 cups water 1 - 8 oz can tomato sauce 4 carrots peeled cut in 2 inch pieces 1/8 c. Fine egg noodles 1 - T fresh parsley chopped 1 tsp. Salt 5 tsp. Vegeta In stock pot sauté onion, celery, grated carrot, and pepper until soft. Add chicken pieces, cover with water. Simmer slowly, covered, until almost tender. Pour broth, after removing chicken through a fine strainer. Place strained broth, chicken pieces into pot. Add tomato sauce, carrot pieces and salt to taste. Simmer until almost tender. Add noodles and parsley. Add Vegeta salt and the juice of half a lemon right at the end. *for our family we add more chicken and to keep the cost lower we use thighs and legs. We also doubled the veggies, but we used the same amount of water so our soup was a little more hearty. Also we took the chicken off of the bone before serving. I hope your family enjoys this soup as much as our tamily has! (This recipe is also on our website ) #budgetfriendlymeals #largefamilymeals #romanianfood #largefamily Thanks for the inspiration @beyondfoodmarket!
