Khati Bhindi (Tangy Okra) Khati Bhindi is a delicious, tangy dish made with okra, tomatoes, and tamarind, perfect for a flavorful vegetarian meal. The combination of tender okra and the rich, tangy tomato-tamarind sauce makes this dish truly mouthwatering. Serve it with steamed rice or fresh roti for a comforting and satisfying meal. Ingredients: * Okra (Bhindi): 500 grams, chopped * Onions: 2 medium-sized, sliced lengthwise * Tomatoes: 3-4, peeled and chopped * Tamarind: 3-4 tbsp, soaked in half a cup of water * Oil: 2-3 tbsp * Salt: To taste * Red Chili Powder: 1 1/2 tsp * Turmeric Powder: 1/2 tsp * Coriander Powder: 1 tsp * Zeera: 1 tsp * Fresh Coriander: For garnish * Green Chilies: For garnish Instructions: * Heat 2-3 tablespoons of oil in a pan over medium heat. Add the sliced onions and sauté until they become soft and translucent, without browning. Remove the onions from the pan and set them aside. * In the same pan, add a little more oil if needed, and fry the chopped okra (bhindi) until they are slightly golden. Remove the okra from the pan and set aside. * In the same pan, add the chopped tomatoes. Sauté over medium heat until the tomatoes are soft and well-mixed together, forming a thick sauce. * Meanwhile, soak 3-4 tablespoons of tamarind in half a cup of water for 10 minutes. Squeeze out the tamarind pulp to extract its juice and discard the solids. * Add the tamarind water to the pan with the tomatoes and cook for a few minutes until the sauce thickens slightly. * Season with salt, red chili powder, turmeric powder, and coriander powder. Stir well to combine the spices with the tomato-tamarind sauce. * Add the fried okra and onions back to the pan. Stir gently to coat the vegetables with the sauce. * Cover the pan with a lid and simmer on low heat for 5-10 minutes to allow the flavors to meld together. * Garnish with fresh coriander leaves and sliced green chilies.
