So good with grilled shrimp 😋 For the Sauce 1 large red bell pepper 3 medium vine tomatoes 1 large red onion (half roasted, half for sautéing) 1 habanero pepper 3–4 garlic cloves 1 tablespoon ginger paste Salt to taste For the Rice 2 cups basmati rice, rinsed ¼ cup olive oil (or neutral oil) ¼ cup tomato paste 1 ½ cups chicken broth (or water) 1 teaspoon curry powder 1 teaspoon smoked paprika ½ teaspoon dried thyme ¼ teaspoon nutmeg 1 teaspoon chicken bouillon powder White pepper, to taste Salt, to taste 1 bay leaf Fresh thyme sprigs Instructions Preheat oven to 425°F. On a sheet pan, arrange the bell pepper, tomatoes, ½ red onion, garlic, and habanero. Drizzle lightly with oil and sprinkle with salt. Roast for about 20 minutes, until some bits are nicely charred. Blend everything with the ginger paste into a smooth sauce and set aside. Heat oil in a heavy pot over medium heat. Add the remaining ½ red onion and sauté until lightly golden. Lower the heat slightly, then bloom the spices, curry powder, smoked paprika, thyme, nutmeg, bouillon, and white pepper, for about 30 seconds, being careful not to burn the curry. Add tomato paste and cook until it deepens in color. Pour in the blended roasted sauce and stir well. Simmer uncovered for about 10 minutes, stirring occasionally, until the sauce thickens and darkens. Add rinsed rice and toss to coat everything. Pour in chicken broth and add the bay leaf. fresh thyme. Bring to a gentle boil, then cover with foil and a lid. Reduce heat to low and simmer for 20–25 minutes until the rice is tender and fluffy.
