好吃到明天想再煮一次🤭 ps. 好多網友試了這個食譜都說好吃 但水太多了~ 大家用的米都不一樣, 建議大家要試的話從2杯米,1杯水開始喔。 試了一次就知道下次水量怎麼拿捏🫶 食材 • 雞腿排 2片 切小塊 • 南瓜 約300g,切小片 • 香菇 10朵,切片 • 洋蔥 ½ 顆,切丁 • 蒜末 5瓣,切末 • 米 2杯,洗淨備用 醃料 • 醬油 2匙 • 蠔油 1匙 • 玉米粉 1小匙 • 香油 少許 做法 1. 雞腿肉切塊,加入醬油、蠔油、玉米粉拌勻,靜置醃10分鐘。 2. 鍋中加少許油,先炒洋蔥,再放入蒜末炒香。 3. 加入雞腿肉炒至變色熟透,放入香菇拌炒均勻。 4. 加入洗好的米,翻炒一下讓米粒吸附湯汁。最後加入南瓜拌炒均勻。 5. 把炒好的南瓜雞肉米倒入電鍋內鍋,加入 1杯半的水(約為正常煮飯水量的3/4 ,或更少) 6. 煮好後先取出寶寶的份,再依個人口味再加入適量醬油與鹽巴拌勻即可。 👉 若不需分寶寶份,可在入電鍋前直接加 2匙醬油、1匙蠔油 一起煮。 💡 小撇步 • 南瓜和香菇都會釋出水分,水量可依米種調整,我2杯米用1.5杯水,已經算偏軟,想保持飯粒口感水量可以米:水 2:1就好。 • 喜歡吃到塊狀南瓜的人,就不要拌太久;我喜歡拌多幾下讓南瓜完全化開到飯裡,像燉飯一樣超濃郁! Pumpkin Chicken Rice Ingredients • 2 chicken thighs, cut into small pieces • 300g pumpkin, sliced • 10 shiitake mushrooms, sliced • ½ onion, diced • 5 cloves garlic, minced • 2 cups rice, washed Marinade • 2 tbsp soy sauce • 1 tbsp oyster sauce • 1 tsp cornstarch • A dash of sesame oil Instructions Step 1 - Cut chicken into pieces, add soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for 10 minutes. Step2 - Heat a bit of oil in a pan, sauté the onion until soft, then add garlic and stir until fragrant. Step 3 - Add chicken and cook until it changes color and is fully cooked. Stir in the mushrooms. Step 4 - Add the washed rice and stir briefly so the grains absorb the sauce. Finally, add the pumpkin and mix well. Step 5 - Transfer the stir-fried pumpkin, chicken, and rice into the rice cooker. Add 1 cup of water (about 1/2 of the normal rice cooking amount). Step 6 - Once cooked, take out a portion for the baby first, then season the remaining rice with soy sauce and salt to taste. 👉 If you don’t need a separate portion for a baby, you can add 2 tbsp soy sauce and 1 tbsp oyster sauce directly to the rice before cooking. Tips 💡 • Pumpkin and mushrooms release water, so adjust the water amount depending on your rice type. I used 1½ cups of water for 2 cups of rice, which results in slightly soft rice. • If you like pumpkin in chunks, don’t stir too much.
