fun thing about celiac: My daughter was diagnosed with Celiac this week. And in Sweden, the soy sauce is by definition glutenfree according to the doctoris and dietists. Because by swedish rules, the gluten is removed in the process.

As a sushi chef- it SHOCKS me how many people DONT know that soy sauce has gluten. And the amount of people who don’t realized imitation crab (It’s also called “Kani Kama”) has wheat like 90% of the time is crazy- had a older celiac customer yesterday and she had no clue that that’s what was making her sick at other places!! Made sure to tell her 😭😭

I just got back from a cooking camp in one of the campers had celiac so my cooking team always made sure to have at least one gluten-free dish just for him and I took time to make him corn tortilla chips since we didn’t have any gluten free ones.
