Shepherds pie! High protein, low calories and big on flavour. Makes 4 serves at 636 calories each. Protein: 50g Carbs: 68g Fat: 19g Ingredients - 700g Extra lean beef mince - 1kg Potatoes peeled and chopped into equal sized pieces - 4 medium stalks of celery finely diced - 2 medium onions finely diced - 2 medium carrots finely diced - 200g green peas - 50g tomato puree - 4 Cloves of garlic finely chopped - 500ml of beef stock - 1/4 cup of flour - 30g of Butter - 30g Parmesan grated - 1tsp dried rosemary - 1 tsp dried thyme - 1 beef cube - 2 bay leaves - 1 Tbsp Worcestershire sauce Method 1. Preheat oven to 180C or 350F and put a large pot of salted water on to boil. 2. 10 g of butter in pan over medium heat. Add in onion, carrot and celery and cook for 5 mins till everything starts to soften. Add in garlic and dried herbs cook for 1 minute till aromatic. 3. Turn up heat to high and add in beef mince cook till browned. 4. Add in flour, tomato paste, broth, stock cube, Worcestershire sauce and bay leaves. 5. Bring to simmer and reduce heat to maintain, I had it on medium. Cook for 30 mins stirring occasionally till it reduces down to a gravy consistency. 6. Add your potatoes to the boiling water and cook till soft. 7. Drain and mash mixing in the rest of the butter and milk. finally season with salt and pepper. 8. Season the mince filling, add in frozen peas and transfer to a baking dish. 9. Spread mash on top and make squiggles on top for a crusty top. top with parmesan cheese. 10. Bake for 30-40 mins till the top is golden brown and bubbling on the edges. 11. Serve into 4 equal servings.
