Strawberry Cheesecake Ice Box Cake Ingredients: • 2 c heavy cream, whipped • 1 can sweetened condensed milk • 8 oz cream cheese, room temperature • 1 tsp vanilla bean paste or vanilla extract • 4 tbsp cheesecake instant pudding mix • Graham cracker sheets • 1-pint strawberries, divided Instructions: 1. From pint of strawberries cut 3 or 4 in half and save for garnish (return to fridge). Slice the remaining strawberries. 2. In a large bowl add cream cheese, sweetened condensed milk, vanilla, and cheesecake pudding mix, mix with electric mixer until smooth. Add heavy cream and whip until stiff peaks form. 3. Line 9x9 (preferred) or 8.5 x 8.5 or 8x8 pan with plastic wrap (optional). Cover bottom of pan with graham crackers, add 1/3 cream- smooth, then cover with sliced strawberries. Add more graham cracker sheets to cover the strawberries, the 1/3 more cream, smooth and cover with strawberry slices, add remaining cream to top of cake. Cover with plastic wrap and refrigerate overnight. 4. When ready to serve transfer cake to serving dish (if pan was lined).
