For anyone reading this who’s newer to foraging: ramps aren’t like onions. The bulb doesn’t grow back once it’s dug, and a patch takes 5-7 years to mature, so harvesting whole bulbs can end a colony that’s been there decades. Leaf-only harvesting (or cutting at the base, leaving the bulb) gets you the same flavor and keeps the patch alive. Worth knowing before you dig.
