Soğan Dolması is a traditional Turkish dish made by stuffing softened onion layers with a savoury filling, then baking them in a rich sauce. The pomegranate molasses adds a sweet and tangy flavour that balances the richness of the meat and helps the onions caramelise as they cook. I saw @foolproofliving vide and just had to make it.  10/10 YUM Ingredients • 4 large onions • 300g mince beef  • ½ cup white rice • ¼ cup pomegranate molasses • 2 tablespoons red pepper paste (or tomato paste) • 2 tablespoons tomato paste • 1½ teaspoons salt • ½ teaspoon black pepper • 1 teaspoon ground cumin • 1 teaspoon allspice • 1 cup chopped fresh parsley Sauce - 2 cups water or stock - 1 tablespoon tomato paste - 2 to 3 tablespoons pomegranate molasses - Pinch of salt - 2 cloves garlic  - olive oil  Method - Bring a large pot of water to the boil. - Trim the ends of the onions and make a single cut from top to bottom through one layer. - Boil the onions for about 10 minutes until softened. - Remove and allow to cool slightly. - Carefully separate the onions into individual layers. - In a bowl, combine the ground beef, rice, red pepper paste, tomato paste, salt, pepper, cumin, allspice and parsley. - Place a small amount of filling into each onion layer and roll it up. -Arrange the stuffed onions tightly in a baking dish  - Mix the sauce ingredients and pour over the onions. - Cover and bake at 180°C for about 30 minutes. - Remove the lid and continue baking for 20 to 30 minutes until the onions are deeply caramelised and the sauce has reduced. - Spoon the sauce over the onions before serving and garnish with fresh parsley. I served mine with some Greek yoghurt, that I added a teaspoon of salt too and some lemon and then I popped it in some paper towel and put it in a sieve so the water drained for a day. I had also put a can of tomatoes on top so it pushed the water out. Highly recommend! OR serve with tzatziki dip.  Either way, it’s really yummy and I did use too many onions.
