Add the diced red onion and red pepper to the pan and cook until softened. 💕Stir in the BBQ sauce and add a splash of hot water (2-3 tablespoons) to loosen it into a sauce 💕Melt the butter spread with the chopped garlic in the microwave until melted, then stir through the chopped parsley. 💕Spoon the BBQ chicken mixture over one half of each flatbread and scatter over the grated mozzarella. 💕Fold the flatbreads over to enclose the filling. Brush the outside lightly with the garlic butter. Cook in a hot frying pan for 2-3 minutes per side until golden and crisp and the cheese has melted. Alternatively, air fry at 190°C for 4-6 minutes until crisp. 💕While the flatbreads cook, stir the peri mayonnaise with 1 teaspoon of hot water to loosen into a drizzle. 💕 Once the flatbreads are cooked, remove from the pan, drizzle over the perinaise and sprinkle with crispy onions.
