Double chocolate peanut butter lava cookies  Recipe:  10 tbsp (140g) unsalted butter, melted and cooled slightly 1/2 cup (110g) light brown sugar  1/3 cup (65g) granulated sugar 1 tsp vanilla extract 1 large egg, room temperature 1 1/2 cups (180g) all-purpose flour 1/3 cup + 1 tbsp (35g) unsweetened cocoa powder 3/4 tsp baking soda 1/2 tsp salt Mix-Ins 1/2 cup dark/bittersweet chocolate, chopped or chips  1/2 cup semi-sweet chocolate chips 60g  Filling:  3/4 cup peanut butter  2 tbsp powdered sugar (optional)  Splash of vanilla  Optional: mix the peanut butter with the powdered sugar and vanilla for less gooey center. The powdered sugar is to hold the peanut butter better. Otherwise, just scoop 8-9 pieces of peanut butter and freeze while you make the dough.  In a large bowl, add the melted butter, light brown sugar, granulated sugar, and vanilla. Mix well. Whisk in the egg and mix until smooth.  Pour in the flour, cocoa powder, baking soda, and salt. (Mix in a separate bowl to make sure it’s all mixed in or just mix it in the bowl)  Fold in using a rubber spatula. Add the chocolate and fold in once more. Chill in the fridge for 20-30 minutes.  Preheat the oven to 350F, line a baking pan with parchment paper.  Once chilled, take the peanut butter out of the freezer and divide the dough into 8-9 pieces. Flatten the dough, place the frozen peanut butter then close. Make sure to pinch all sides. Bake for 11-12 minutes. Make sure to let the cookies cool down before picking them up.
