@mathias_ingenohl: Chả lụa is the last of three cold cuts that I made for my bánh mì. It’s commonly found in Vietnam as a component of many other dishes aswell. What makes it unique is its particularly bouncy texture. While traditionally made from pork loin, I went with a leaner bit of shoulder as a more economical alternative but you can do it as you please. Make sure to check out my Vietnamese ham video if you want to see how I make the fried garlic for seasoning. 900g lean pork shoulder 180g pork fat 100g ice 10g tapioca starch 4g baking powder 70g fish sauce 20g sugar 5g ground white pepper 2 tsp fried garlic #chalua #banhmi #vietnamesefood #coldcuts #sausage
