The dish combines tender cod with a fragrant sauce, topped with crispy ginger for that umami kick Ingredients 250g cod fish fillet, patted dry 2 inches ginger, julienned and fried Some sesame oil Sauce 1 tbsp oyster sauce 1 tbsp light soy sauce 1 tbsp fish sauce ½ tbsp sugar 80 ml water 1 stalk coriander 1 tbsp wolfberries Instructions 1. Mix the sauce ingredients and cook over low heat until fragrant. The goal is to infuse the aromatics into the sauce without reducing it. 2. On a steamer, steam the fish with some julienned ginger for 5 minutes over medium heat. 3. While the fish steams, fry the julienned ginger in sesame oil until brown and set aside. 4. When the fish is cooked, discard the liquid. Pour the sauce over the fish, garnish with fried ginger and coriander leaves.
